Ingredients:
• 2 medium-sized – Potatoes
• 1 large – Aubergine
• 1 – Onion (red)
• 2 – Green chillies
• 2 tbsp – Butter
• Coriander leaves
Method:
- Cut the green chillies and onion into small pieces.
- Boil the potatoes and aubergine (baingan) with the skins on. Once boiled and cooled, remove the skins.
- Mash them together, adding the butter in.
- Add all the other ingredients. Mix well with the mash.
- Serve it as a side dish, or make it a sandwich filler.
