Ingredients:

• For Aamras:
• 1 – mango, ripe
• 2 – Cardamom
• 3-4 – Saffron strands
• 2 tsp – Sugar
• For Poori:
• 1 cup – Wheat flour
• 1/4 cup – water or as required
• Oil for frying

Method:

  1. For Aamras:
  2. Wash and peel the mango. Scrape the pulp into a bowl.
  3. Blend mango pulp, cardamom, saffron and sugar together in food processor.
  4. Once smooth blend again to make a fine puree.
  5. Pour in serving bowl. Refrigerate till serving.
  6. For Poori:
  7. Knead slightly tight dough with enough water. Let it rest for 10 minutes.
  8. Make 4 small balls, on the rolling board make small rounds with rolling pin.
  9. Heat oil in a wok, slowly fry the round till puffed and golden from both sides.
  10. Drain on paper towel.
  11. Serve poori with Aamras.
