Ingredients:

• 1 cup – Rice (cooked with 1 tsp oil and 1 tsp salt)
• 2 – medium Potatoes cooked, peeled and cubed
• 2 – Tomatoes chopped
• 1 – Green Pepper cut small
• 2 tsp – Peanuts/Cashew (optional)
• 1/4 tsp – Turmeric
• For seasoning:
• 1/2 tsp – Mustard, 1/4 tsp – Hing
• Ground powder:
• 1 tsp – Channa Dal
• 1 tsp – Urad Dal
• 4/5 – Dry Red Chilli
• 1 stick – Curry leaves
• 1 inch – Cinnamon stick
• 2 -Cloves
• 2-Cardamoms
• Marble – sized Tamarind
• 3 tsp – Desiccated Coconut
• Garnish: Green Coriander leaves

Method:

  1. Heat 2 tsps oil, and add mustard, hing, nuts. Fry till golden brown.
  2. Put in potatoes, green pepper and turmeric, fry for 3 mins.
  3. Add tomatoes, salt and cook for 2 mins.
  4. Add the ground powder mix.
  5. Add rice, mix well and garnish with green coriander.
