Ingredients:
• 3 – medium sized potatoes, peeled and sliced
• 250 g – horse gram (choliya or hara channa)
• 2 – Onions
• 6 Cloves – Garlic
• 1 – ginger, small piece
• 3 – Tomatoes
• 4 – Green chillies
• 1/4 tsp – Asafoetida
• 2 tsp – Cumin seeds
• Spices:
• 1 tsp – Turmeric powder
• 1 tsp – Red Chilli powder
• 2 tsp – coriander powder
• 2 tsp – Garam Masala
• Salt to taste
• 4 tbsp – vegetable oil
• 1/2 cup – chopped Coriander leaves
• Water as needed
Method:
- Wash, peel and roughly chop onions, garlic, ginger tomatoes and chillies.
- Heat oil in a pan or pressure cooker add garlic, ginger and onions.
- Saute till golden in colour.
- Keep the remaining oil in the cooker.
- Aloo Choliya:
- Take chopped tomatoes and chillies in food processor, drain out the fried onions mixture, add over the tomatoes in the food processor. Grind to form a smooth and fine paste. Keep aside.
- To the remaining oil, add asafoetida and cumin seeds. Saute and add potatoes, stir for 5-7 minutes.
- Add all spices and salt, mix well.
- Add the paste made above, saute till oil comes out from edges.
- Add horse gram, give a nice stir and add 1 litre of water. Close the lid and cook for 3 whistles.
- Open the lid, cook for another 5 minutes. Remove from heat, add chopped coriander.
- Serve hot with chapattis.
