Ingredients:

• 500 grams – dried Apricots
• 500 grams – Dates
• 1 kg – soft Brown sugar
• 500 grams – white Sugar
• 3 tbsp – Lime juice
• 3 tbsp – Lime juice
• 1/2 tsp – active Dry yeast
• 4 liters – water

Method:

  1. Chop the apricots and dates and boil with 2 litres of water till soft.
  2. Remove from heat and mix in the sugar, brown sugar and lime juice and mix well.
  3. When cold sprinkle the yeast on top.
  4. Keep covered to ferment for 21 days, stirring every day.
  5. Strain and throw away the residue.
  6. Let it stand for 2 more weeks then strain and bottle.
