Ingredients:
• 1 – medium Avocado
• For the filling:
• 1 – avocado, peeled and grated
• 1/2 tsp – green Mango paste
• 2 tbsp – mayonnaise
• 2 tbsp – grated Carrots
• 2 tbsp – sweet mango, cut into small pieces
• 1/2 tsp – Sugar powder
Method:
- In a mixing bowl mix together the grated avocado, mayonnaise, green mango paste, carrots and sugar powder and pieces of sweet mango. Keep aside.
- To serve:
- Cut the avocado (keep for serving) into halves and remove the seed.
- Discard the seed and use the prepared filling to fill the avocado. Chill in the fridge and serve.
