Ingredients:

• 1 cup – Avocado pulp
• 1 can – condensed Milk
• 1 cup – fresh Cream
• 1/2 cup – thick curds
• 1 packet – china grass
• 1/4 tsp – vanilla essence
• 1/2 tsp – Lemon juice
• 1 or 2 drops – yellow food color (optional)

Method:

  1. Soak china grass in 2 cups hot water. Stand for 15-20 minutes, till mushy.
  2. Blend avocado pulp with lemon juice in mixie till smooth.
  3. Heat china grass over slow flame.
  4. Stir continuously till fully dissolved, keep aside.
  5. Beat condensed milk, cream, curd, till smooth.
  6. Add avocado pulp, beat again, with electric hand beater.
  7. Add china grass, essence, colour, beat again till smooth.
  8. Pour in a pudding dish, chill in freezer till firmly set.
  9. Cut and serve chilled squares with any of the following to top:
  10. Vanilla ice cream
  11. Slices of avocado and other fruit
  12. Whipped sweetened cream swirls.
