Ingredients:
• 2 – Big Potatoes
• 1/2 cup – Sweet Corn
• 1/2 cup – Capsicum, finely chopped
• 2 tsp – Cheddar cheese
• 2 tsp – Parmesan cheese
• 2 tsp – Tomato ketchup
• Mozzarella cheese
• Black pepper powder
• Salt to taste
• Sour Cream
Method:
- Preheat the oven to 180 degrees C.
- Poke holes in the potatoes with a fork and bake them for 1/2 hour.
- Remove from the oven and allow them to cool.
- Mix together sweet corn, capsicum, cheddar cheese, parmesan cheese, salt, black pepper, ketchup and sour cream.
- Cut the potatoes into 2 halves and scoop out the centre.
- Stuff the potatoes with the mixture, sprinkle some mozzarella cheese.
- Bake the potatoes till the cheese melts.
- Serve hot.
