Baked Cheese Fish

Ingredients:

• 3 cups – fish (cooked and boned)
• 8 tomatoes, thinly sliced
• 2 capsicums, thinly sliced
• 2 onions, thinly sliced
• 1 bunch – coriander leaves, chopped
• 4 Cloves – garlic, crushed
• 4 tbsp – grated cheese
• 4 tbsp – breadcrumbs
• 1 tsp – freshly ground pepper
• 1 1/2 tsp – chilli powder
• salt to taste

Method:

  1. Grease a baking dish.
  2. Cover the bottom with half the quantity of onions, coriander, capsicum, garlic and tomatoes.
  3. Sprinkle with half the quantity cheese and half the quantity chilli powder, salt to taste and pepper.
  4. Arrange the fish evenly over the layer of cheese and seasonings.
  5. Cover the fish with the remaining cheese, sprinkled with the remaining chilli powder, pepper and salt.
  6. Cover with the remaining chilli powder, pepper and salt.
  7. Cover with the remaining vegetables in the same order as before.
  8. Sprinkle the top with breadcrumbs and dot with butter.
  9. Cover with aluminium foil and bake in a mode oven for 30 mins.
