Ingredients:

• 500 g – salmon
• 1/2 tbsp – Vinegar
• 3 tbsp – hot Red Chilli sauce
• 2 tbsp – Chinese cooking wine
• 1 tbsp – chilli Garlic sauce
• 2 tbsp – light soya sauce
• Salt to taste
• Leeks – slit, length wise
• 1/4 cup – Onions ground into paste
• 2 tbsp – thinly sliced Garlic
• 1 tsp – sesame seeds
• 1/4 tsp – pepper powder
• 1 tsp – Rice flour or semolina.

Method:

  1. Wash and make several cuts over the fillet diagonally.
  2. Mix all the sauces, wine, vinegar, salt and onion paste and marinate the fish and set aside for at least for 2 hours.
  3. Preheat the oven at 160 C and bake this fish for 40 to 60 mins. After 20 mins add the leeks and sprinkle the garlic, pepper powder and sesame seeds and continue to bake. Drizzle the rice flour.
