Ingredients:

• 1 – large tender Beetroot
• 150 g – ripe black Grapes
• 1 – apple, diced
• 1/2 – lemon, juice extracted
• 2 tbsp – Sugar
• 1/4 tsp – salt
• 1/2 tsp – pepper powder
• 1/2 tsp – dried Mint powder
• 400 ml – chilled water

Method:

  1. Peel and dice beetroot into big chunks.
  2. Steam or microwave, to soften a bit.
  3. Cool, by holding under running water.
  4. Put beetroot, apple and grapes in an electric mixer.
  5. Run to form a smooth paste.
  6. Add lemon, sugar, salt and run again.
  7. Add water and run, till mixture is smooth and frothy.
  8. Strain through a sieve and pour into individual glasses.
  9. Sprinkle a little powdered pepper and mint.
  10. Serve chilled or at room temperature.
