
Ingredients:
• 6 – large Bananas
• 1/2 kg – white bread
• 1 – Coconut
• 1/2 cup – Sugar
• 2 tbsp – Almonds
• 2 tbsp – Plums
• 1/2 tsp – Nutmeg powder
• 2 tbsp – Butter
• 3 – eggs
Method:
- Scrape the coconut and extract as much juice as you need.
- Clean the plums and cut into smaller pieces.
- Blanche the almonds and cut into thin, long strips.
- Remove the crust from the bread slices, mix with the coconut juice and mash.
- Peel the bananas and mash the pulp. Mix with the bread mash.
- Mix in all the other ingredients and blend thoroughly.
- Keep the batter sufficiently thick.
- Pour the batter in a butter dish and bake in an oven.
- Baste the top with butter.
- Prick a knife or a skewer into the pudding and pull it out. If no batter sticks to it, the pudding is ready
