Ingredients:

• 6 – large Bananas
• 1/2 kg – white bread
• 1 – Coconut
• 1/2 cup – Sugar
• 2 tbsp – Almonds
• 2 tbsp – Plums
• 1/2 tsp – Nutmeg powder
• 2 tbsp – Butter
• 3 – eggs

Method:

  1. Scrape the coconut and extract as much juice as you need.
  2. Clean the plums and cut into smaller pieces.
  3. Blanche the almonds and cut into thin, long strips.
  4. Remove the crust from the bread slices, mix with the coconut juice and mash.
  5. Peel the bananas and mash the pulp. Mix with the bread mash.
  6. Mix in all the other ingredients and blend thoroughly.
  7. Keep the batter sufficiently thick.
  8. Pour the batter in a butter dish and bake in an oven.
  9. Baste the top with butter.
  10. Prick a knife or a skewer into the pudding and pull it out. If no batter sticks to it, the pudding is ready
