Ingredients:

• 10 – Long blue brinjal, sliced
• 1 – Onion
• 2 – Tomato
• 1 tsp – Chilli powder
• 1 tsp – Coriander powder
• 2 tsp – Tamarind paste
• 4 Cloves – Garlic
• 1 cup – Oil
• 1 tsp – Mustard
• 1 tsp – Cumin seeds
• 1 tsp – Black seeds
• 1 cup – Coconut Milk
• 2 tsp – Salt

Method:

  1. Heat the oil in a pan and fry the black seeds, mustard, cumin seeds, and garlic for two minutes.
  2. Then add chopped onion and tomato and cook.
  3. Add a little water and make a juice of the tamarind paste.
  4. Add the juice and brinjal into the pan and cook.
  5. Add coconut milk and salt, cook till everything is well done.
