Ingredients:

• 1/3 cup – Jaggery powder
• 1/2 cup – Apple juice (no added sugar)
• 1/3 cup – Butter
• 1 cup – mixed dry fruits
• 1/4 cup – chopped candied peel
• 1/2 tsp – soda
• 2 tbsp – brandy, rum or tea decoction
• 1 cup – flour (maida)
• 1/2 tsp – baking powder
• 1 Egg
• blanched Almonds for topping

Method:

  1. Dissolve jaggery in apple juice.
  2. Strain, add butter, fruits and peel. Boil gently for 5 minutes.
  3. When it is slightly cooled, add soda, brandy/rum/tea and spice powder. Allow to cool completely.
  4. Mix flour with baking powder. Beat the egg.
  5. Add these to the cooled fruit mixture. Mix well (Avoid over beating).
  6. Pour in a prepared 61/2 round or square tin.
  7. Arrange blanched almonds on top. Bake at 180 degrees centigrade till done. ( About 1/2 Hr. )
