Ingredients:

• 1/2 lbs – Bread
• 1 cup – chopped Cauliflower
• 1/3 cup – Green peas
• 1 small – capsicum, grated
• 1 – medium-sized tomato, chopped
• 1 – small onion, grated
• 1/2 – carrot, cut into small pieces
• 5 gms – Cashew nuts and Raisins
• 1 tsp – Ghee (clarified butter)
• Coriander leaves, for garnishing
• 2 tsp – Sugar
• Salt to taste

Method:

  1. Crush the bread manually, using a little water to make it soft. Set aside.
  2. Heat oil in pan and put in the cauliflower, carrot and capsicum. Cook until soft.
  3. Add the onions and tomatoes. Take care they do not brown or burn. Add the bread,cashew nuts, raisins, sugar and a pinch of salt.
  4. Mix with a spatula. You can add a little ghee (1 tsp), for flavor.
  5. Remove onto a serving plate and decorate with fresh coriander leaves.
