Ingredients:

• Brinjal of medium size – 2
• Onion – 1
• Garlic – 4 Cloves
• Pepper – 1/4 tsp
• Curry leaves – few, chopped fine.
• Chilli powder – 2 tbsps
• Ginger – 1/4 inch
• Turmeric powder – 1/4 tbsp
• Salt to taste.

Method:

  1. Make a paste of onion, garlic and ginger. Add chilli powder, turmeric powder, salt, pepper and mix it thoroughly
  2. Cut Brinjal vertically to get thin slices.
  3. Cover the slices with the above paste and keep aside for 10 minutes
  4. Deep fry the slices in oil.
