Ingredients:

• 1 kg – Brinjal cubed
• 1 – Onion
• 1 tbsp – Channa dal
• 1 cup – Peanuts
• 2tbsp – Dhania seeds
• 4-5 – Red Chillies
• 1 tbsp – Tamarind juice
• 1/2 tsp – Jeera
• Salt to taste

Method:

  1. Heat oil in a pan, add onions and saute till translucent.
  2. Add brinjals, salt and fry till tender.
  3. In a separate pan, fry channa dal, peanuts, dhania seeds, red chillies, jeera and grind with tamarind juice to a paste.
  4. Add this paste to the pan with the brinjals and shallow fry for 5 mins.
  5. Serve hot.
