Ingredients:
• 250 g – Brinjal
• 250 g – Fenugreek leaves
• 1 – Onion
• 1 – Tomato
• 1 tsp – ginger-garlic paste
• 1 tsp – Red Chilli powder
• 1 tsp – coriander powder
• 1/4 tsp – Turmeric powder
• Salt
• Oil
Method:
- Heat oil in a pan. Add chopped onion and fry
- When the onion turn brown, add chopped tomatoes, salt and spices
- When the mixture boils, add chopped brinjal, stir well and cover till brinjal is cooked
- When the brinjals are done, add the fenugreek leaves
- Mix well and cook for 5 mins
- Serve with chapati
