Ingredients:
• 2 – long Brinjals (cut into small pieces)
• 3 to 4 – Potatoes (cut into small pieces)
• Oil – as needed
• 1 tsp – Cumin seeds
• 2 tsp – black Mustard Seeds
• 2 tsp – Turmeric powder
• 4 to 5 tbsps – cumin and coriander powder
• 1 tsp – Garam Masala powder
• 1 tsp – Ginger paste
• 1 tsp – Garlic paste
• 5 to 6 tbsp – besan (gram flour)
• 2 cups – Milk
• salt to taste
Method:
- Heat oil in pan and splutter cumin and mustard seeds.
- Add cut potatoes and brinjal pieces. Add turmeric, cumin-coriander powder, garam masala powder, ginger and garlic pastes and salt.
- Mix all the seasoning well with the potato and brinjal pieces.
- Add little oil if the mixture looks dry.
- After seasoning is mixed well with the potato and brinjal pieces, add besan and mix it well.
- You may add some more oil if needed.
- Add milk and cook till the potato and brinjal pieces turn soft.
- Serve this vegetable hot with fresh rotis.
