Ingredients:
• 250 g – Prawn, medium side
• 100 g – Brinjal, cut into 1 by 2 inch slice
• 100 g – tomato, chopped
• 1/2 tbsp – cumin
• 1/2 tbsp – mustard
• 1/2 tbsp – Turmeric
• 1 tbsp – cumin
• 2tbsp – mustard
• 3 – Green chilli
• C Coriander leaves
• 4 Cloves – Garlic
• 1/4 inch – Ginger
• Grind all ingredients into a paste with 2 tbsp of water
• Salt to taste
• 5 tbsp – oil
• 1/2 cup – water
Method:
- Clean the prawns.
- Take 2 tbsp of oil in a frying pan, and fry the brinjal until golden brown. Keep the fried brinjal aside.
- Then take 2 tbsp of oil and fry the prawn on a low heat until golden brown.
- Keep the prawn aside.
- Take 1 tbsp of oil and when oil start to heat, add the 1/2 tbsp of cumin and 1/2 tbsp of mustard.
- Then add the chopped tomato and let it cook for 2 to 5 minutes.
- Then add the fried prawn, the brinjal, the paste and turmeric and salt to taste.
- Let it cook for 5 minutes and add 1/2 cup of water.
- Keep your pan on a high heat then reduce the heat and keep it in low to medium heat for 5 minutes.
- And your curry is ready serve hot with rice.
