Ingredients:

• 1 – big violet Brinjal
• 2 cup – fresh Curd
• 1 – medium onion, finely chopped
• 1 – medium tomato, finely chopped
• 2 – green chillies, finely chopped
• A few – finely chopped Coriander leaves for garnishing
• 1 tsp – Mustard Seeds
• 2 tsp – oil for frying
• Salt to taste

Method:

  1. With a skewer, pierce and roast the brinjal over open flame on the gas stove
  2. Peel the skin of the brinjal and get the cokked pulp
  3. Mash the pulp with a spoon and add this to the fresh curd
  4. Heat the oil for frying and splutter the mustard seeds
  5. Switch off the gas stove and pour the seeds over the curds and brinjal
  6. Add chopped onion, tomatoes and green chillies
  7. Add salt to taste and mix well
  8. Serve with any pulao or flavored rice.
