Ingredients:

• Paneer – 100 gm
• small tender Brinjals – 1/2 kg
• oil – 4 tbsp
• Coriander seeds – 3 tsp
• Bengal Gram (Channa) Dal – one and a half tsp
• black gram (Urad) Dal – one and a halftsp
• Red Chillies – 6
• Asafoetida – 1/2 tsp
• Mustard Seeds – 1 tsp
• salt to taste

Method:

  1. Cut away the stalks and slit the brinjals into flour, keeping them joint at the base.
  2. Grate the paneer.
  3. Heat 2 tsp of oil and roast coriander seeds, Bengal gram Dal, black gram Dal, red chillies and asafetida.
  4. Cool and powder coarsely.
  5. Mix the powder with salt and paneer.
  6. Stuff the brinjals with this mixture.
  7. Heat the remaining oil and add mustard.
  8. When it crackles, add the brinjals.
  9. Cover and cook slow flame till brinjals are tender.
  10. Serve hot with steamed rice and Dal.
