Ingredients:

• Capsicum – 2 each of red, green and yellow variety (cut into thin, long strips)
• Basmati Rice (soaked for 15 minutes and cooked) – 1 cup
• Butter/ Olive oil – 1 tbsp
• Basil – 1 tsp
• Oregano – 1/2 tsp
• salt to taste
• Grated cheese – 3 tbsp

Method:

  1. Cook the rice and allow it to cool on a plate.
  2. Heat oil/butter in a thick-bottomed pan.
  3. Add the capsicums and fry until almost cooked. Keep stirring so that they do not become soft.
  4. Add basil and half of the oregano. Mix well and fry for a minute.
  5. Add the cooked rice and salt and mix well.
  6. Spread on a serving dish, cover with grated cheese and sprinkle the remaining oregano.
  7. Warm in the microwave for a minute before serving with hot tomato chutney.
