Ingredients:
• Capsicum – 2 each of red, green and yellow variety (cut into thin, long strips)
• Basmati Rice (soaked for 15 minutes and cooked) – 1 cup
• Butter/ Olive oil – 1 tbsp
• Basil – 1 tsp
• Oregano – 1/2 tsp
• salt to taste
• Grated cheese – 3 tbsp
Method:
- Cook the rice and allow it to cool on a plate.
- Heat oil/butter in a thick-bottomed pan.
- Add the capsicums and fry until almost cooked. Keep stirring so that they do not become soft.
- Add basil and half of the oregano. Mix well and fry for a minute.
- Add the cooked rice and salt and mix well.
- Spread on a serving dish, cover with grated cheese and sprinkle the remaining oregano.
- Warm in the microwave for a minute before serving with hot tomato chutney.
