Ingredients:
• 3 – Capsicums
• 2 cups – cooked rice, preferably sona masuri
• 1 – Carrots
• 2 – boiled Potatoes
• 1/2 cup – peas
• Slit Green chillies – a few
• Chopped Ginger – a few
• Karipatta and Coriander leaves – a few
• 3-4 tbsp – grated fresh Coconut
• juice of 1 Lime
• Salt – to taste
• Oil – to taste
• Turmeric powder, mustard seeds, Channa dal and Urad Dal – for seasoning.
Method:
- Heat oil and add mustard seeds. After it splutters, add chana dal and urad dal and let them brown.
- Add slit green chillies, ginger and karipatta leaves.
- Add chopped capsicum, carrots and peas and let them get cooked.
- Add boiled and mashed potatoes, turmeric powder and salt.
- After the vegetables are mixed well, add grated coconut and coriander leaves.
- Add lime juice and mix with cooked rice.
- You can also add cashew nuts while seasoning and/or chopped methi leaves with the other vegetables for special taste.
