Ingredients:

• 3 – Capsicums
• 2 cups – cooked rice, preferably sona masuri
• 1 – Carrots
• 2 – boiled Potatoes
• 1/2 cup – peas
• Slit Green chillies – a few
• Chopped Ginger – a few
• Karipatta and Coriander leaves – a few
• 3-4 tbsp – grated fresh Coconut
• juice of 1 Lime
• Salt – to taste
• Oil – to taste
• Turmeric powder, mustard seeds, Channa dal and Urad Dal – for seasoning.

Method:

  1. Heat oil and add mustard seeds. After it splutters, add chana dal and urad dal and let them brown.
  2. Add slit green chillies, ginger and karipatta leaves.
  3. Add chopped capsicum, carrots and peas and let them get cooked.
  4. Add boiled and mashed potatoes, turmeric powder and salt.
  5. After the vegetables are mixed well, add grated coconut and coriander leaves.
  6. Add lime juice and mix with cooked rice.
  7. You can also add cashew nuts while seasoning and/or chopped methi leaves with the other vegetables for special taste.
