Ingredients:

• 3 – large Capsicum
• 4 – medium sized, white Brinjals
• 1 – large Tomato
• 1 – medium sized Onion
• 2 tbsp – freshly grated Coconut
• 1 tsp – chilli powder
• 1/4 tsp – Turmeric powder
• 1 tbsp – Garam Masala powder
• A few – Curry leaves
• Salt to taste
• 2 tbsp – oil

Method:

  1. Deseed the capsicums and cut them into cubes.
  2. Cube the brinjals too. Immerse them in cold water.
  3. Heat the oil in a kadai and fry the finely minced onion to a golden brown.
  4. Then add the curry leaves.
  5. Now mix in the finely cut tomato and the powders. Fry for sometime.
  6. Drain the capsicum and brinjal cubes from the water and add it to the masala in the kadai.
  7. Pour in a cup of water and add salt.
  8. Simmer till cooked and dry.
  9. Just before serving sprinkle the grated coconut on the top.
