Ingredients:

• 1 cup – plain flour
• 1 cup whole-wheat flour
• 1 cup – Sugar (powdered)
• 1/2 tsp baking powder
• 1/2 tsp baking soda
• 1/4 tsp Cinnamon powder
• 1.25 cups of Milk
• 3/4 cup of melted Butter
• 1 cup – Carrot (grated)
• 1/2 cup Raisins

Method:

  1. Sieve together dry ingredients 2-3 times.
  2. Mix milk and butter till well blended.
  3. Gently stir in sieved ingredients.
  4. Fold in carrot and raisins.
  5. Do not mix too much since a lumpy batter makes better muffins.
  6. Bake in preheated oven at 200 degrees C for 20 minutes
