Ingredients:
• 1 kg – Carrots
• 1.5 litre – Milk
• 500 g – Sugar
• A few – strands of Saffron
• 1 tsp – Cardamom powder
• 20 pieces – almonds, soaked in water for 5 hours
• 15 pieces – Pista
• 15 pieces – cashew nuts, soaked in water for 2 hours
• 4 tbsp – fresh Cream
Method:
- Peel and grate carrots.
- In a thick-bottomed pan, add milk and carrots and boil till thick, stirring occasionally.
- Once it starts thickening, stir continuously.
- Add sugar and cook further till it thickens more.
- Add fresh cream, saffron, cardamom powder and half of the almonds, pista, cashew nuts.
- Stir on low heat till the mixture forms a soft ball.
- Garnish with the remaining dry fruits and serve hot .
