Ingredients:

• 1 medium onion, chopped
• 2 tbsp – Butter or stick margarine
• 2.5 cups – water
• 2 medium carrots, cut into 1 inch julienne strips
• 1 cup – uncooked long grain Rice
• 1/2 cup – Raisins
• 1 tbsp – Chicken bouillon granules
• 1/2 tsp – curry powder
• 1/4 tsp – salt
• 1/4 tsp – dried Thyme
• 1/4 cup – slivered almonds, toasted

Method:

  1. In a saucepan, saute the chopped onion in butter until tender.
  2. Stir in the water, carrots, rice, raisins, bouillon, curry powder, salt and thyme.
  3. Bring to a boil, then reduce the heat.
  4. Cover and simmer for 15 to 20 minutes or until rice is tender.
  5. Sprinkle with almonds before serving
