Ingredients:

• 1/4 cup – grated cheese
• 6 ozs – semolina
• 1 oz – Butter
• 1 yolk – Egg (beaten)
• 1 pint – Milk
• Salt and pepper

Method:

  1. Boil the semolina with the milk and cook slowly for 10 mins.
  2. Stir in cheese, butter and seasoning.
  3. Remove from heat and stir in the beaten egg.
  4. Turn into a plate and when cold, cut into squares.
  5. Sprinkle with grated cheese and bake in the oven until brown.
