Ingredients:

• 1 – large ripe Pineapple
• 300 g – Paneer
• 1/2 cup – grated cheese
• 1/2 tsp – dry mustard
• 1/2 tsp – salt
• 2 tbsp – finely minced Capsicum
• 1/2 tsp – freshly ground pepper
• 1 tbsp – rum or brandy

Method:

  1. Slice off the top of the pineapple and keep aside.
  2. Scoop out the fruit and cut into very small cubes.
  3. Cream the cheese in a bowl then mix in all the other ingredients, one at a time, leaving the pineapple for the last.
  4. Put the mixture back into the pineapple shell, cover with the top and chill for 1 hour, or longer.
