Ingredients:

• 250 g – skinless boneless Chicken (fat removed)
• 1 liter – Chicken stock
• 1 – Cinnamon stick, 2 inches
• 2 – Star anise
• 2 tbsp – dark soya sauce
• 3 tbsp – Tomato puree
• 100 g – chestnuts, cleaned and sliced
• 2 cups – brown rice, cooked
• 1 tbsp – Orange rind
• 6 tbsp – Orange juice
• To taste – pepper
• To taste – salt

Method:

  1. Boil the chicken and shred it.
  2. Take a large saucepan and put the chicken stock, with the boiled shredded chicken in it.
  3. Then add cinnamon, star anise, soya sauce, tomato puree and chestnuts.
  4. Cover the pan and simmer gently for about 10 minutes.
  5. Remove and discard the cinnamon and the star anise.
  6. Stir in the rice, orange rind and juice.
  7. Season with salt and pepper.
  8. Garnish with strips of orange rind.
