Ingredients:
• 250 g – skinless boneless Chicken (fat removed)
• 1 liter – Chicken stock
• 1 – Cinnamon stick, 2 inches
• 2 – Star anise
• 2 tbsp – dark soya sauce
• 3 tbsp – Tomato puree
• 100 g – chestnuts, cleaned and sliced
• 2 cups – brown rice, cooked
• 1 tbsp – Orange rind
• 6 tbsp – Orange juice
• To taste – pepper
• To taste – salt
Method:
- Boil the chicken and shred it.
- Take a large saucepan and put the chicken stock, with the boiled shredded chicken in it.
- Then add cinnamon, star anise, soya sauce, tomato puree and chestnuts.
- Cover the pan and simmer gently for about 10 minutes.
- Remove and discard the cinnamon and the star anise.
- Stir in the rice, orange rind and juice.
- Season with salt and pepper.
- Garnish with strips of orange rind.
