Ingredients:

• 1/2 kg – Chicken breasts, skinned and boned
• 3 Cloves – garlic, crushed
• 1/4 tsp – Ginger
• 1 cup – low sodium Chicken broth
• 1 – onion, chopped finely
• 1 tsp – Olive oil
• 1 cup – Water
• 1/2 tsp – cumin powder
• 1 tsp – coriander powder
• 1/4 tsp – Garam Masala
• 1/2 tsp – Turmeric powder
• 1 – green chilli, finely chopped
• 2 tbsp – Coconut Milk
• 3 tbsp – coriander leaves, finely chopped

Method:

  1. Cut chicken breasts ito small pieces.
  2. Heat oil in a pan and saute the chicken pieces until golden on both sides
  3. Remove and drain
  4. Add onion and ginger-garlic and fry till golden brown
  5. Add all the powders, and saute for a minute
  6. Add chicken broth and water and let it boil for 2 mins
  7. Add the chicken pieces
  8. Cover pan and cook for approx 30 mins.
  9. Then add coconut milk
  10. Cook for another 1 min.
  11. Serve with rice
