Ingredients:
• Chicken – 1kg
• Cooking oil as required
• Big Onions – 3
• Small Onions – a handful
• Ginger – big piece, finely chopped
• Garlic – 4 pods, finely chopped
• Green chillies – 6 (finely chopped)
• Mustard – 1/2 tsp
• Coriander powder – 1 tsp, heaped
• Chilli powder – 1/2 tsp
• Garam Masala powder – 1 tsp
• Coconut Milk as required
• Potato – 1 medium size
• Tomatoes – 2 (medium)
• Coriander and Curry leaves – 1 bunch
• Turmeric – 1/2 tsp
• Salt to taste
Method:
- First fry ginger and garlic and then big onions and green chillies.
- Add coriander, chillies, garam masala, and turmeric powder and fry.
- After frying, add one tomato and saute a little.
- Then add chicken pieces and stir on low flame for 2 to 3 minutes.
- After that, add a little coconut milk diluted with boiling water and salt.
- When it starts boiling, add potato and after 5 minutes, add a tomato and boil.
- When the chicken gets cooked, add thick coconut milk and simmer on medium flame.
- When a foam forms on the surface, stop fire.
- Finally, fry mustard, small onions, coriander, and curry leaves and add to the chicken stew.
