Ingredients:

• 3/4 cup – button Mushrooms
• 1/2 cup – capsicum, cubed
• 1/3 cup – spring onions, separate the white and greens
• 1 – onion, cubed
• 1 tbsp – chopped Garlic
• 1 tbsp – Olive oil
• 1 tbsp – soya sauce
• 1 tsp – chilli sauce
• 3/4 tsp – Tomato ketchup
• 1/8 tsp – pepper powder
• A pinch of salt

Method:

  1. Heat olive oil in a wide skillet
  2. Add garlic and saute for a min.
  3. Add the chilli, white spring onions and cubed onions, saute for a min
  4. Move the onions and garlic to one side of the skillet, add mushrooms, sprinkle very little salt and fry for 2 mins.
  5. Add the capsicum and spring onions, toss and fry till the capsicums are almost cooked and crisp.
  6. Mix all the sauces and pour it in the skillet evenly, add pepper powder, toss and fry for another min and switch off the heat
  7. Garnish with green spring onions and serve
