Ingredients:

• 1/4 kg boneless Chicken breast, skinless
• 1/4 cup chopped Spring onion
• 1/2 cup boiled peas
• 1 cup shredded Carrots
• 2 cups shredded Lettuce
• 1 cup chinese noodles, heated briefly to crisp
• Mix together for dressing-
• 1/2 tsp grated Ginger
• 1 tbsp Lemon juice
• 1 tbsp Rice Vinegar
• 1/4 tsp Red Chilli paste
• 1 tsp sesame oil
• 2 tbsp Peanut Butter 4 tsp soy sauce
• Salt to taste
• 1/4 cup- mixed fruit jam

Method:

  1. Boil the chicken till cooked Make into small pieces (1″ approx.) In a bowl mix chicken pieces, peas, carrots and spring onion
  2. Pour the dressing on the mixture and toss it well
  3. In a salad dish, spread the lettuce leaves
  4. Cover with noodles
  5. Finally pour the chicken mixture over it
  6. Before serving garnish with crisp noodles or coriander leaves
