Ingredients:
• 1 bar – dark chocolate
• 1 bar – white chocolate
• 1 tbsp – rum
• 200 g – frozen Raspberry
• 60 g – Sugar
• 25 g – Corn starch
Method:
- To make Raspberry Filling:
- When the frozen berries cool to room temperature heat it in a heavy bottom vessel. When the raspberries boil add sugar and corn starch.
- When the corn starch gets cooked and clear remove from fire.
- When the mixture cools add 2 tbsp rum.
- Make small balls of the raspberry fillings. They will be sticky.
- Melt the dark, white chocolate in double boiler or microwave for 30 to 60 seconds depending on the quantity.
- Dip the raspberry balls in melted chocolate, place it on the butter paper, refrigerated until it sets.
