Ingredients:

• 1 bar – dark chocolate
• 1 bar – white chocolate
• 1 tbsp – rum
• 200 g – frozen Raspberry
• 60 g – Sugar
• 25 g – Corn starch

Method:

  1. To make Raspberry Filling:
  2. When the frozen berries cool to room temperature heat it in a heavy bottom vessel. When the raspberries boil add sugar and corn starch.
  3. When the corn starch gets cooked and clear remove from fire.
  4. When the mixture cools add 2 tbsp rum.
  5. Make small balls of the raspberry fillings. They will be sticky.
  6. Melt the dark, white chocolate in double boiler or microwave for 30 to 60 seconds depending on the quantity.
  7. Dip the raspberry balls in melted chocolate, place it on the butter paper, refrigerated until it sets.
