Ingredients:

• 3 tbsp – cocoa powder
• 11 gms – (1 sachet) gelatin
• 3 – eggs
• 8 tbsp – Sugar
• 2 cups – Milk
• 200 gms – fresh Cream
• 1 tsp – vanilla essence
• 1 bar – chocolate (40 gms)

Method:

  1. Place 3 tbsp of cold water in a bowl.
  2. Sprinkle gelatine on the surface of the water.
  3. Leave to soak for 5 minutes.
  4. Dissolve the gelatine by standing the bowl in a pan of hot water.
  5. Separate the egg whites and the yolks.
  6. Add sugar to the yolks.
  7. Beat the egg yolks till they acquire a creamy texture.
  8. Add milk and cocoa powder to the mixture and mix well.
  9. Boil over a medium flame to make custard.
  10. Stir at regular intervals.
  11. When the mixture reaches a thick consistency of a custard, remove from flame.
  12. Cool completely and add the melted gelatine.
  13. Mix gently.
  14. Place this vessel (with the mixture) in a bowl filled with ice-cubes and stir till the mixture thickens.
  15. Gently beat the cream till it thickens a little and add it to the custard.
  16. Beat the egg whites until stiff and add it to the custard.
  17. Add essence and mix gently.
  18. Pour in a fancy bowl and leave to set in the fridge.
  19. Once it sets decorate with grated chocolate.
  20. Serve chilled.
