Ingredients:

• 1 cup – finely grated Carrots
• 3/4 cup- dark Brown sugar
• 1/2 cup Butter (1 stick)
• 1 cup – mixture of almond, pecan, cashew, walnut, and Pista nuts
• 1 cup – boiling water
• 1.5 cups – whole Wheat flour
• 1/2 cup – unsweetened cocoa powder
• 1 tsp- all-spice powder
• 1 tsp- baking powder
• 1/2 tsp- sodium bicarbonate
• 1/2 tsp- salt

Method:

  1. Preheat oven to 350 degree F.
  2. In a big bowl, combine carrots, sugar, and butter. Pour the boiling water into this.
  3. In another bowl, mix all the other ingredients.
  4. Add this to the carrot mixture and blend well.
  5. Pour this onto a greased cake pan.
  6. Bake till a toothpick inserted in the centre of the cake comes out clean.
