Ingredients:
• 3 – Tomatoes
• 2 – onions, chopped
• 1 – Green chilli slit
• 1 spring – Curry leaves
• A pinch – mustard
• A pinch – cumin
• A pinch – asafetida
• 1 tsp – Red Chilli powder
• 1 tbsp – roasted white sesame seeds
• 4 tbsp – Coconut Milk
• Oil – 2 tbsp
• Salt to taste
Method:
- Wash and blanche tomatoes and peel off the skin.
- Chop tomatoes, removing the seeds.
- Toast sesame seeds, grind to a fine powder and keep aside.
- Heat a pan with oil, splutter mustard, cumin, curry leaves and green chilli.
- Add asafoetida, onions, salt and fry till they turn slightly pink. Do not brown the onions
- Add chopped tomatoes, turmeric, fry for 3 to 4 mins, cover and cook till the tomatoes turn fully mushy and soft
- Add red chilli powder and fry for a min or 2
- Add sesame seed powder, mix and fry for a min
- Pour coconut milk. Mix well. Simmer for a min or 2.
- Serve.
