Ingredients:

• 100 gms – basmati Rice
• 1 litre – Milk
• 6 – Cardamoms
• 400 gms – sweetened condensed Milk
• 170 gms – condensed Milk Cream
• 1 tbsp – pistachios, almond, Cashew nut paste
• 3-4 – Saffron strands
• Sugar to taste
• For garnishing:
• 4 – almonds, julienned
• 4 – pistachios, julienned
• 1 pinch – Saffron
• 4-8 – raisins, optional

Method:

  1. Soak and wash the rice and drain in a cloth.
  2. Blend it to a coarse powder in a blender (the consistency should be like semolina)
  3. Boil milk and add the whole cardamoms and allow it to simmer (you may remove the cardamoms after a while)
  4. Add the powdered rice and keep boiling, stirring continuously to avoid lumps.
  5. Add water, if required, and cook till done.
  6. Now reduce the heat and add the condensed milk and cream
  7. Mix in the pistachios, almonds, cashew paste and saffron, while stirring again.
  8. Add sugar and garnish with almonds, pistachios and saffron.
  9. Refrigerate for 5-6 hours
  10. Remove and serve chilled.
