Ingredients:

• Fresh coriander: 3 bunches
• Green chillies: 10
• Tamarind: as needed
• Salt: 3 tsp
• Small brinjals: 10
• Oil: 5 tbsp

Method:

  1. Cut the brinjals in 4, but with pieces still attached at the stalk.
  2. Grind coriander, chillies, tamarind and salt to a thick paste.
  3. Stuff this mixture in the brinjals.
  4. Heat oil and fry the stuffed brinjals till cooked well.
