Ingredients:
• 500 gm – broken vermicelli, boiled
• 3 tbsp – Olive oil
• 200 gm – tomatoes, peeled and chopped
• 100 gm – onions, chopped
• 1 tbsp – minced Garlic
• 1 tbsp – minced Red Chillies
• 1 cup – boiled Corn
• 1 tsp – dried Oregano
• 1 tsp – black pepper powder
• 1 cup – grated cheese
• A few sprigs of parsley, for garnishing
• salt to taste
Method:
- Heat oil in a casserole for a minute.
- Add onions, garlic and mix. Cover and microwave on ‘High’ for three minutes until onion becomes soft.
- Add tomatoes and minced red chillies.
- Microwave on ‘High’ for three minutes more.
- Add corn, oregano, salt and black pepper.
- Mix and microwave on ‘High’ for one minute.
- Add vermicelli and mix well.
- Just before serving, sprinkle cheese over the vermicelli.
- Cover and microwave on ‘High’ for three minutes so that the cheese will melt.
- Garnish with parsley and serve hot.
