Ingredients:

• 1 cup cooked Rice (leftovers)
• 1 cup Corn kernels (frozen)
• 5-7 Green chillies
• 1/2 tsp Mustard Seeds
• 1/4 tsp Asafoetida
• 2 tbsp dry Coconut powder
• 2 tsp oil
• 1-2 tsp Lemon juice

Method:

  1. Run the frozen corn under hot water and strain it.
  2. Heat the oil in a pan.
  3. Once oil is hot, add the mustard seeds. Let them splutter.
  4. Then add the cut green chillies and saute for a few seconds.
  5. Now add the corn (frozen corn is already a little soft).
  6. Saute for around 2 minutes.
  7. Add the cooked rice and saute.
  8. Add the dry coconut powder and mix well.
  9. Then add the lemon juice and mix well.
  10. Serve hot.
