Ingredients:
• 1 cup – Wheat flour
• 3/4 cup – Corn meal
• 1/3 cup – low calorie Sugar
• 2 tsp – baking powder
• 3/4 cup – fat-free buttermilk
• 1/4 cup – fat-free sour Cream
• 1 cup – cranberries, chopped
• 1 – Egg white, whipped
• 1/2 tsp – Lemon peel, grated
Method:
- Preheat an oven to 350 degrees C.
- Prepare muffin pans with cooking spray and flour. Set aside.
- In a mixing bowl, combine flour, corn meal, 1/3 cup of sugar and baking powder.
- In another mixing bowl, combine the egg white, buttermilk, sour cream, lemon peel and cranberries.
- Add the flour mixture and mix well.
- Use an ice-cream scoop to fill muffin tins three-fourths full.
- Bake for 20 minutes or until golden.
