Ingredients:

• 2 cups – macaroni
• 1 – Onion (finely chopped)
• 1 – Tomato (finely chopped)
• 2 – Garlic (finely chopped)
• 3 tbsp – Olive oil
• 5-6 tbsp – Tomato sauce
• 1 cup – Milk
• 1/2 cup – white sauce
• 3-4 tbsp – Coriander leaves (finely chopped)
• 1 tbsp – Oregano
• 2 tbsp – black pepper
• 1 cup – grated mozzarella cheese
• salt to taste

Method:

  1. Cook the macaroni according to package directions.
  2. Drain the cooked macaroni and allow it to cool a little bit.
  3. In a medium-sized saucepan, heat olive oil over medium high flame.
  4. Add onion and garlic and saute gently for 2-3 mins.
  5. Add the chopped tomato and coriander leaves and saute for 5 mins on medium heat or until the tomatoes are done.
  6. Add tomato sauce and oregano and mix well.
  7. Add 1 cup of milk, 1 tbsp of black pepper and salt to taste and bring to boil.
  8. Lower the heat, cover and allow it to simmer for 15 mins. Your red sauce is ready.
  9. Grease a microwave-safe dish with 2 tbsp of olive oil and add one-quarter of the red sauce as a layer at the bottom.
  10. Spread one-third of the white sauce on top, carefully applying with a large spoon or spatula.
  11. Add the cooked macaroni over the white sauce.
  12. Press lightly with the spatula.
  13. Add 1 cup of grated cheese over the macaroni.
  14. Sprinkle black pepper on the top.
  15. Repeat the same process once more by applying red sauce over the cheese, then white sauce, macaroni and finally the remaining cheese.
  16. Microwave at 60 degrees for 5 mins and then grill for 2 mins.
  17. Pour in a plate, mix well and serve hot.
