Ingredients:

• For Crackers:
• 1 cup – plain flour
• 1/2 cup – fine semolina
• 2 tbsp – Corn flour
• 1/2 cup – sesame seeds
• 1 tbsp – oil
• oil to deep fry
• salt to taste
• Other Ingredients:
• 1 – medium yellow pepper (finely chopped)
• 1 – medium red pepper (finely chopped)
• 1 – small green Capsicum (finely chopped)
• 1/2 – Tomato (finely chopped)
• 1/2 – Onion (finely chopped)
• 1/2 cup – green Tomato relish (refer Tomato dishes in cookbook)
• 1/2 tsp – Sugar
• 1/2 tbsp – Olive oil
• 2 tbsp – grated Paneer or cheese
• pepper to taste
• salt to taste

Method:

  1. For Crackers:
  2. Mix all ingredients except oil to deep fry.
  3. Add a little water at a time and knead to a smooth pliable dough.
  4. Roll out 15 rounds each 3 in diameter.
  5. Prick each one all over with a fork or knife.
  6. Allow to dry on a cloth for 10-15 minutes.
  7. Deep fry in hot oil, on medium flame, till crisp.
  8. Drain on absorbent kitchen paper.
  9. Store in airtight container till required.
  10. To proceed:
  11. Heat oil, add all three peppers saute for a minute.
  12. Take off fire, sprinkle a tsp. corn flour, mix.
  13. Allow to cool to room temperature.
  14. Add all other ingredients, toss gently to blend flavours.
  15. To Serve:
  16. Serve a dollop of veggie mixture over each cracker.
  17. Serve immediately.
