Ingredients:

• 300 g – chicken, cut into small pieces
• 3 – onions, chopped
• 2 tsp – chopped Mint
• 1 tsp – pepper powder
• Salt to taste
• 2 tbsp – Tomato sauce
• 1 tsp – Butter
• 1 – Egg beaten
• 3 tbsp – oil
• 3 tbsp – bread crumbs.

Method:

  1. Cook chicken with salt in a little water till tender.
  2. Remove from heat and cool.
  3. Shred into very small flakes.
  4. Mix in the chopped onions, mint, pepper, salt, tomato sauce and butter.
  5. Form into oval shapes and flatten with a knife.
  6. Heat oil in a flat pan.
  7. Dip each cutlet in the beaten egg, roll in breadcrumbs then shallow fry on both sides till brown.
  8. Drain and serve.
