Ingredients:

• 2 cups – Cake Flour
• 2.5 tsp – baking powder
• 1/2 tsp – salt
• 1/2 cup – Sugar
• 1/2 cup – Butter or margarine
• 1/2 cup – chopped Walnuts
• 1/2 cup – sliced dates, washed and dried
• 1/2 cup – Milk
• 1 – Egg
• 1 tsp – vanilla essence

Method:

  1. Sift the flour with the baking powder and salt.
  2. Add the sugar.
  3. Rub in butter with your fingertips, aerating the flour at the same time.
  4. Add the dates and nuts.
  5. Beat the egg, mix it with the milk and essence.
  6. Make a well in the centre of the flour mixture, pour in the liquid ingredients and gradually mix into a smooth batter of stiff consistency.
  7. Bake for an hour at 350 degrees F. If necessary, bake for 15 minutes longer, reducing heat to 300 degrees F.
