Ingredients:

• 250 g – Peanuts
• 1/2 tsp – salt
• 1 tsp – water
• 1 sprig – Curry leaves (optional)
• 200 g – oil
• Spice powder:
• 3/4 tsp – Red Chilli powder or 1/2 tsp – Kashmiri Red Chilli powder
• 1/4 tsp – Hing (asafetida)
• 1/2 to 3/4 tsp – salt
• Mix all the spice ingredients together and keep aside.

Method:

  1. Mix peanuts with salt.
  2. Sprinkle 1 tsp water and mix well.
  3. Keep aside for 20 – 25 minutes.
  4. Heat oil in a frying pan. Reduce heat to medium and fry peanuts in batches (till golden colour). Drain and place on kitchen paper to absorb excess oil.
  5. After frying each batch of peanuts, mix spice powder (1/2 tsp for each batch) while the peanuts are still hot. Sprinkle deep fried curry leaves over it (optional). Serve with Tea / Coffee.
